About the Recipe
These delicious veggie tacos with mango salsa might be the overall favorite meal at the retreat. Loaded with sautéed vegetables and your favorite toppings, these tacos are fully customizable. Simple ingredients, no seed oils, wholesome and nourishing food. This is an easy meal you could turn to almost every day of the week.

Note: The ingredient quantities listed are approximate. I’ve been cooking by ‘eyeballing’ for years, and this recipe has naturally evolved without precise measurements. I have done my best to estimate the correct amounts and ratios of ingredients for smaller portions, but feel free to adjust as needed. Everyone’s taste preferences vary, so you may want more or less of some ingredients. Feel free to play and make it your own! Enjoy.
Ingredients
Tortillas (corn or flour)
1 cup homemade refried beans (warmed)
1 cup cooked rice (white or brown)
1 tbsp olive oil
2 cloves garlic (minced)
1/2 onion (sliced)
1 red bell pepper (sliced)
1 tsp cumin
1/2 tsp smoked paprika
Salt & pepper to taste
1 cup lettuce (shredded)
1 tomato (diced)
1/2 cup guacamole
Preparation
Step 1 - Prepare the toppings
Chop the tomato and lettuce and make the the guacamole, mango salsa and place in fridge. Start cooking the rice and prepare the refried beans
Step 2 - Prepare the fajita veggies
Heat olive oil and garlic in a skillet over medium heat. Add sliced onions and red bell peppers, sauté for 3-4 minutes. Add taco spices (garlic pepper, cumin, smoked paprika, salt, and pepper.) Sauté for another 2-3 minutes until veggies are soft.
Step 3 - Assemble the tacos
Put as much of each ingredient on a tortilla of your choosing. Serve with a squeeze of lime.
