Note: The ingredient quantities listed are approximate. I’ve been cooking by ‘eyeballing’ for years, and this recipe has naturally evolved without precise measurements. I have done my best to estimate the correct amounts and ratios of ingredients for smaller portions, but feel free to adjust as needed. Everyone’s taste preferences vary, so you may want more or less of some ingredients. Feel free to play and make it your own! Enjoy.
Ingredients
1 Mango
1 Small Red Onion
Cilantro, chopped
Juice of 2 Limes
Olive Oil
Salt
Pepper
Preparation
Step 1 - Prepare the Mango, Onion and Cilantro
Peel the mango and dice it into small, bite-sized pieces. Place the diced mango in a medium-sized mixing bowl. Finely dice the red onion and add it to the bowl with the mango. Then, chop the cilantro and sprinkle it in, adjusting the amount to suit your taste.
Step 2 - Dress and Season
Squeeze the juice of two limes over the mango, onion, and cilantro mixture. This will add a fresh and tangy flavor. Add a drizzle of olive oil (about 1–2 teaspoons) to bring everything together and enhance the texture. Season with Salt and Pepper to your preference.
Step 3 - Chill & Serve
For best results, let the salsa sit in the fridge for about 15–30 minutes to allow the flavors to meld
