Ingredients
1/4 small green cabbage. chopped
1/2 small red cabbage, chopped
2 large carrots, shredded
1 red pepper, chopped
1/2 cup crushed peanuts
cilantro, chopped
Peanut Sauce
2 tbsp rice wine vinegar
2 tbsp peanut butter
1 tsp ginger powder
1 tbsp amino acids or soy sauce
Preparation
Step 1 - Prepare the veggies
Chop the cabbage, red pepper, and cilantro into small pieces. Shred the carrots and crush the peanuts for added texture and crunch.
Step 2 - Mix the Ingredients
In a large bowl, combine the chopped cabbage, red pepper, cilantro, shredded carrots, and crushed peanuts. Toss everything together until evenly mixed.
Step 3 - Prepare the Peanut dressing
In a medium bowl, whisk together the peanut butter, rice wine vinegar, amino acids (or soy sauce), and ginger powder until smooth and thick. If needed, adjust the consistency by adding more peanut butter.
Step 4 - Add Sauce to Ingredients
Pour the peanut dressing over the prepared vegetables and toss well to ensure everything is evenly coated. Serve immediately or let sit for a few minutes to allow the flavors to meld.
