Fried sweet plantains, or plátanos maduros, are a delicious caramelized and naturally sweet side dish loved across Latin America and the Caribbean. Made with ripe plantains, these golden-brown slices are sweet and soft on the inside, creating the perfect balance of texture and flavor. Whether served alongside rice and beans, as a snack, or even as a dessert, these fried plantains are delicious and simple to make.

Note: The ingredient quantities listed are approximate. I’ve been cooking by ‘eyeballing’ for years, and this recipe has naturally evolved without precise measurements. I have done my best to estimate the correct amounts and ratios of ingredients for smaller portions, but feel free to adjust as needed. Ingredients
1/3 cup Coconut Oil
4 Ripe Plantains
Preparation
Step 1 - Prepare the Plantains
Peel the plantains and slice them diagonally into ½-inch thick pieces.
Step 2 - Fry Plantains
In a large skillet, heat enough coconut oil over to coat the bottom of the pan over medium heat until shimmering. Add the plantain slices in a single layer, making sure not to overcrowd the pan. Fry for 2–3 minutes per side, or until golden brown and caramelized.
Step 3 - Drain Excess Oil
Remove the plantains from the pan and place them on a plate lined with paper towels to absorb excess oil. Sprinkle with a pinch of salt, if desired.
