A favorite on ceremony days, our Pineapple Rice is a perfect balance of tropical sweetness and savory goodness. This light yet satisfying dish is a go-to meal that’s hearty enough to enjoy on its own, yet versatile enough to pair with chicken for a protein-packed dinner. It stores well in the fridge, making it an excellent option for a quick snack or an easy meal anytime. Whether you're nourishing yourself after a deep journey or simply craving a taste of the tropics, this flavorful rice dish is sure to hit the spot.

Note: The ingredient quantities listed are approximate. I’ve been cooking by ‘eyeballing’ for years, and this recipe has naturally evolved without precise measurements. I have done my best to estimate the correct amounts and ratios of ingredients for smaller portions, but feel free to adjust as needed. Everyone’s taste preferences vary, so you may want more or less of some ingredients. Feel free to play and make it your own! Enjoy.

Ingredients

  • 1 tbsp Coconut Oil

  • 1 cup White or Brown Rice

  • 3/4 cup Fresh Pineapple, chopped

  • 1/2 cup 100% Pineapple Juice

  • 1/2 cup Coconut Milk

  • 1 small Red Onion, finely diced

  • 4 Garlic bulbs, finely diced

  • 3/4 cup Crushed Cashews

  • 1/4 coconut flakes

  • 1 Lime, cut in wedges

  • Fresh Cilantro, finely chopped

  • Bacon Bits

  • Salt, Pepper and Curry to taste


Preparation

Step 1 - Cook the Rice


In a rice cooker, combine white rice, pineapple juice, and coconut milk. Add water if needed to ensure the liquid-to-rice ratio is 2:1. Cook until the rice is tender and fully absorbed.


Step 2 - Sauté the Ingredients


Heat a small amount of coconut oil in a frying pan over medium heat. Add the garlic and red onion, stirring occasionally until softened and aromatic. Next, incorporate the crushed cashews and coconut flakes, sautéing for a few minutes until they become golden and fragrant. Lastly, add the chopped pineapple and cook until it is warmed through.


Step 3 - Combine and Mix


Add the rice a little at a time to the frying pan or large mixing bowl with the sautéed ingredients until you reach your desired ratio. Mix thoroughly, allowing the flavors to blend together. (For extra flavor, add a dash of curry powder in this step)


Step 4 - Garnish and Serve


Transfer the rice mixture to a serving dish. Garnish with lime juice, fresh cilantro, and bacon bits (or vegan bacon bits). Serve warm and enjoy this tropical delight!
