These creamy coconut overnight oats are a delicious and effortless way to start your day! Made with organic oats, rich coconut milk, and warm cinnamon, this recipe is naturally flavorful and can be customized to your taste. The addition of coconut flakes gives it a delightful texture, while a touch of maple syrup (if desired) adds just the right amount of sweetness. Simply mix everything together, refrigerate overnight, and wake up to a ready-to-eat.

I have done my best to estimate the correct amounts and ratios of ingredients for smaller portions, but feel free to adjust as needed. Ingredients

  • 2 cups organic whole grain or gluten-free oats

  • 2 cups coconut milk

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • 1/2 tbsp coconut flakes

  • 1/2 cup chia seeds

  • 2 tbsp maple syrup or honey (optional)

  • fruits of your choice (optional - blueberry, strawberry, banana, peach, etc.)

  • almonds (optional)

Preparation

Step 1 - Combine Ingredients


In a large bowl or jar, mix the oats, coconut milk, chia seeds, vanilla extract, cinnamon, and coconut flakes. Stir well to combine.


Step 2 - Sweeten (Optional)


If desired, add maple syrup or honey for extra sweetness and stir again.


Step 3 - Add fruits (Optional)


You can add this step now or top with fresh fruits when you're ready to eat. Adding fruit in advance allows the oats to soften the fruit and absorb some flavor.


Step 4 - Refrigerate Overnight


Cover and refrigerate for at least 6 hours or overnight to allow the oats to soften and absorb the flavors. Top with fresh fruit and almonds.
