About the Recipe

Sweet, savory, and perfectly caramelized, these roasted carrots with maple syrup drizzle are a simple yet flavorful side dish that pairs beautifully with any meal. The natural sweetness of the carrots is enhanced by a light coating of maple syrup, while a touch of cinnamon adds warmth and depth.

Note: The ingredient quantities listed are approximate. I’ve been cooking by ‘eyeballing’ for years, and this recipe has naturally evolved without precise measurements. I have done my best to estimate the correct amounts and ratios of ingredients for smaller portions, but feel free to adjust as needed. Everyone’s taste preferences vary, so you may want more or less of some ingredients. Feel free to play and make it your own! Enjoy.

Ingredients

  • 1 tbsp olive oil or butter

  • 6 large carrots, sliced in halves

  • 1 tbsp 100% Maple Syrup

  • 1/2 tsp cinnamon (optional)

Preparation

Step 1: Preheat the Oven


Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.


Step 2: Prepare the Carrots


In a large mixing bowl, toss the peeled carrots with olive oil or melted butter until evenly coated. Sprinkle with salt and if you’re using cinnamon, sprinkle it in at this stage as well.


Step 3: Roast


Spread the carrots out in a single layer on the prepared baking sheet, Place the baking sheet in the preheated oven and roast for 20–25 minutes, turning the carrots halfway through. Roast until they are tender and slightly caramelized at the edges.


Step 4: Add the Maple Syrup


Remove the carrots from the oven and drizzle them with maple syrup. Toss gently on the baking sheet to coat them evenly, then return them to the oven for another 5 minutes to let the syrup glaze the carrots.


Step 5: Remove and Serve


Remove the roasted carrots from the oven and transfer them to a serving dish.
